Places to Learn: Buttercream Flower Cupcake Decorating

A few weeks ago, the girls and I learned the art of decorating cupcakes with buttercream flowers at the Classic Cupcake Co in Mosman. I previously blogged about this tiny white cupcake shop here.

We learned how to prepare and spoon the icing into disposable piping bags; which nozzle to use for each type of petal; the art of piping at the correct angle to create petals and; how to place tiny chocolate balls and flick glitter off a paintbrush onto the cupcake to enhance the design.

The course was held in the small kitchen at the back of the shop. It was honestly a tight squeeze with 10 students and the teacher all huddled around a medium-sized table filled with 6 cupcakes and a large box each. There was just enough room in the centre of the table for the large bowls of buttercream icing, piping bags and nozzles.

Even though you can easily find cupcake tutorial videos online, it was great to be shown the techniques in person. Our teacher, who was sometimes abrasive and rushed, checked our technique for each cupcake. However this individual attention and being a little unprepared at the beginning might have contributed to the course running over the scheduled time. Running time was supposed to be an hour but we ended up spending more than an hour and a half. It would also have been nice to sit on stools at table.

Overall, though, I would recommend this cupcake decorating course. Although it’s a little pricey at $150 per person, the course content and recipe sheets to take home were excellent and the cupcakes were delicious. (I didn’t actually pay for the course myself because one of the girls kindly paid for all three of us. It was very sweet of her and I felt very lucky.) It was also a great way to spend some time with the girls, learning, having fun and giggling lots!

I think I have a little work to do to reach The Classic Cupcake Co’s decorating standards. But my first attempt wasn’t too bad, if I say so myself!

    You wouldn’t happen to know of a place in Sydney that teaches basic piping techniques,would you?
