Christmas is celebrated in the summer months in Sydney (or Australia!) so the traditional feast is (sometimes) replaced by something colder, for example, swapping the steamed pudding for a cold pavlova.
Pavlova – named after the Russian ballet dancer Anna Pavlova and apparently created by a chef in Wellington, New Zealand – is simply a meringue base topped with fresh fruits and cream. They come in all shapes and sized although the traditional version, I believe, is about the size of a proper cake.
I bought these mini pavlova nests online by accident (because I thought they were little meringue cookies…) but you can make them yourself using this recipe here. Making a pavlova from scratch is definitely on my ‘to learn’ list for next year!
I made my super easy version with yogurt and berries because I’m not very good with dairy cream (as I’m slightly lactose intolerant).
